Asparagus Fettuccini

Ingredients:

 

·        4 ounces uncooked fettuccini

 

·        ½ lb fresh asparagus, trimmed and cut into 1-inch pieces

·        ¼ cup chopped onion (1/2 medium onion)

·        1 garlic clove; minced

·        1 tbls butter

 

·        2 ounces cream cheese, cubed

·        ¼ cup milk

·        ¼ shredded parmesan cheese

·        1 ½ tsp lemon juice

·        1 tsp grated lemon peel (optional)

·        ¼ tsp salt

·        1/8 tsp pepper

 

Directions

1.     Cook fettuccini according to package directions

2.     In a large skillet, sauté the asparagus, onion and garlic in butter until tender.

3.     Add the remaining ingredients.

4.     Cook and stir over medium heat for 5 minutes, or until cheese is melted and sauce is blended.

5.     Drain fettuccini, add to other pot.  Stir and serve.
