Hunterís Style Chicken with Bow Tie Noodles

Adapted from The Peace Corps Namibia Cook Book

 

Ingredients:

 

        12 oz. box of bowtie noodles

 

        olive oil

        1 medium onion

 

        1 chicken breast, cut into bite-sized pieces

 

        1 tbls chopped parsley

        2 tsp basil

        1 tsp salt

        1/4 tsp pepper

 

        1/2 cup white wine (cooking wine)

        2 cans diced tomatoes with juice

 

        10 oz. frozen peas

 

Directions

1.     Cook bowtie noodles according to directions on the box; drain.

2.     Saute onions; add chicken and brown.

3.     Add the rest of the ingredients and simmer until chicken and peas are fully cooked.

4.     Add the sauce to the noodles; enjoy.
