Pineapple Chicken Rice

Ingredients:

 

·        1 onion, chopped

·        2 teasp. minced garlic

·        chicken breast, cut into bite-sized pieces

 

·        1 cup uncooked rice

 

·        1 can chicken broth (1 ½ cups)

·        1 cup pineapple juice (juice from 1 can pineapple tidbits)

·        3 Tablesp. Ketchup

·        2 Tablesp. White vinegar

·        1 Tablesp. Soy sauce

 

·        1 chopped red bell pepper

·        1 can pineapple tidbits (drained)

 

Directions:

 

1.     Sauté the onions and garlic in a little bit of oil.

2.     Add the chicken breast and brown.

3.     Add rice, sauté for a minute.

4.     Add the liquidy ingredients to the sautéed ingredients and bring to a boil.

5.     Cover, reduce heat, and simmer for 25 minutes or until the liquid is mostly absorbed and the rice is tender.

6.     Add bell pepper and pineapple tidbits.  Cook for 5 more minutes.
